How to Store Natural Honey

Simple storage rules to keep raw honey tasting the way it should — no fridge required.

Raw honey is one of the most stable foods in the world. Stored well, it keeps its flavour and aroma for years. Stored badly, it can lose the delicate character that makes it worth buying in the first place.

Do

  • Keep honey at room temperature, ideally between 15 and 22°C.
  • Store it somewhere dry and out of direct sunlight — a cupboard is perfect.
  • Keep spoons sealed until you are ready to use them.
  • Use a clean, dry teaspoon (or the sachet itself) each time to avoid introducing water.

Don’t

  • Refrigerate honey — the cold speeds up crystallisation.
  • Microwave honey in plastic or heat it above 40°C, which damages enzymes and aroma.
  • Leave jars or sachets open in humid rooms; honey draws in moisture from the air.

If your honey does crystallise, it is not spoiled. Sit the sealed spoon or jar in a bowl of warm (not hot) water for a few minutes and it will return to a smooth, pourable texture.
