How Raw Honey Differs From Processed Honey

What actually happens to honey in a factory — and why raw, unpasteurised honey tastes so different.

The word ‘honey’ covers a wide range of products. On one end sits raw honey, taken from the hive and packed with minimal handling. On the other sits heavily processed honey — filtered, heated and often blended across continents. Sohail Honey sits firmly at the raw end.

What ‘raw’ really means

Raw honey is coarse-strained to remove wax and debris but not fine-filtered. That means trace pollen, propolis and honeycomb fragments remain, giving the honey its character, aroma and depth.

Why processed honey is different

Commercial honey is often heated to high temperatures and pushed through very fine filters. This makes it clear, uniform and slow to crystallise, but it also strips out much of what makes honey interesting — the enzymes, the delicate volatile aromas and the tell-tale pollen that shows where the honey is from.

How to spot the difference

  • Raw honey can look cloudy, streaky or slightly grainy — that is normal.
  • Raw honey may crystallise over time; heavily processed honey usually stays liquid for years.
  • Raw honey has a distinct aroma that shifts with the season and the source.
  • The label should say ‘raw’, ‘unfiltered’ or ‘unpasteurised’ — vague terms like ‘pure’ alone do not guarantee it.
